Meatballs Noodle Soup

"It's tasty as it looks, this is a wonderfully refreshing noodle soup. You can use beef cubes instead of meatballs & you can add bit of chili flakes if you like it bit hot. It's nicely goes with prawn chili oil or with bit of light soya sauce."

Ingredients:

12 Medium Meatballs (cut in to half slice)
3 Tablespoon Soya sauce (light)
1 Teaspoon Shrimp paste (optional)
1 Tablespoon Oil
1 Medium Onion (chopped)
3 Clove Garlic (chopped)
200 Grams Noodles (rice noodles)
1 Small Spring onion (cut diagonal thin shape)
1 Small Red chili (cut diagonal thin shape)

Directions:

Step 1
In a bowl mix meatballs with soya sauce and set aside for 10 minutes to marinate.
Step 2
Heat the oil in a sauce pan, when oil is hot add meatballs in to the sauce pan and fry both side well about 10 minutes. Stirring occasionally.
Step 3
Then add onion and garlic in to the sauce pan and mix well all together, stir well.
Step 4
Now add shrimp paste and mix well. Cook more about 10 minutes until meatballs are tender. Then remove from the heat.
Step 5
Meanwhile heat the water in a large saucepan and bring to the boil . When water is hot add noodles in to the sauce pan and cook according to package directions.
Step 6
When noodles cooked, put remaining water in to a bowl and set a side (for soup).
Step 7
Now in a separate bowl put noodels, meatballs and remaining water mix well and enjoy. If you want add more soya light sauce to your taste.
Step 8
Add spring onion & red chili slices as garnish just before you serve. Serve hot.
