Kimbula Banis (කිබුලා බනිස් / Kibula Buns)

"As the name suggest 'Kimbula Banis' in Sinhala language means 'crocodile buns' or at least shaped as the animal itself. Kimbula buns are loved by almost everyone in Sri Lanka as a breakfast or a late-afternoon snack. Who would say no to a warm kimbula banis with a hot Ceylon tea... any one?"

Ingredients:

For activate the yeast

7 Grams Yeast
1 Tablespoon Sugar
5 Tablespoon Milk (Lukewarm)

For the dough

400 Grams Plain flour
165 Millilitre Milk
1 Medium Egg
50 Grams Sugar
1/2 Teaspoon Salt
65 Grams Butter

For sugar coating

5 Tablespoon Water
1 Tablespoon Sugar
50 Grams sugar (to sprinkle)

Directions:

To activate the yeast

Step 1
Add yeast and sugar into a small bowl then add lukewarm milk & give it a gentle stir and set a side for about 5 minutes until yeast activate (form and bubble up).

To make the dough

Step 2
<div id="stcpDiv">Add flour to a mixer bowl. Then add salt, sugar, egg, activated yeast, and remaining milk. Using a wooden spoon stir vigorously start from the centre and working towards the sides of the bowl.</div>
Step 3
Once its get start to clump, mix well by using hand to get rid of any lumps. Transfer the dough onto a flat surface. Knead gently until the dough is silky and elastic for about 15 minutes.
Step 4
<div id="stcpDiv">Once the kneading is done, shape the dough into a ball. Place it into a large bowl and cover with a cling film or a damp kitchen towel. Let the dough rise in a warm place until it has double in size (for about 30 minutes).</div>
Step 5
When the dough is ready, remove the cling film cover. Use your fist to punch it down, to eliminate any air bubbles. Transfer the dough onto a flat surface. Then roll the dough into a single roll &amp; cut into to 4 pieces.
Step 6
Take one piece of dough and shape it into a ball. By using a wooden dough roller shape the dough into a flat thin sheet (about 2mm thick) then cut into a wide triangle shape. Gently roll it down from the long edge towards the corner of the triangle. Place it in a lined baking tray.
Step 7
Repeat these cut and rolling steps with rest of dough pieces (you can also try a small version). You can also use the off-cut trimmings by coalesce them into a ball and repeat the rolling process.
Step 8
Place them in a lined baking tray and cover it with a cling film. Let the bun rise for about 30 minutes. Once the buns are risen take off the cling film.

To make the sugar coating

Step 9
Add sugar into 3 tablespoons of water and stir till sugar granules dissolves. Apply the sugar water coating on top and sides of the buns by using a brush. Sprinkle sugar over the buns generously.
Step 10
Place the baking tray in the middle section of a pre heated oven at 200 C. Bake them for about 20 minutes until buns get light golden brown colour. Take them out of the oven & rest them for about 10 minutes before serve. Enjoy !
