Butter Cake (බටර් කේක්)

"Baking aroma & taste of a butter cake take me back to my childhood memories. My Mom frequently bake this lovely treat & I always impatiently waiting to taste this fluffy, buttery yumminess. This is a lovely choice to accompany with tea & fit for any special occasion. Serve this goodness with double cream."



To make the cake

250 Grams butter (at room temperature)
250 Grams sugar
4 Medium eggs
250 Grams plain flour
2 Teaspoon baking powder
2 Teaspoon vanilla
2 Tablespoon milk


Step 1
Preheat the oven to 180 C and Lightly grease a baking tin with melted butter and line it with grease-proof paper. Sieve flour then add baking powder in to the flour, mix well all together.
Step 2
Beat butter and sugar in a mixing bowl of an electric mixer fitted with the paddle. Beat on high speed about 8 minutes until butter and sugar are pale and creamy. Scrape down the sides of the mixing bowl time to time.
Step 3
Add egg 1 at a time while beating on medium speed about 5 minutes. Then add vanilla essence in to the mixture and beat more about 1 minutes.
Step 4
Fold in the flour and milk. Pour into the cake tin. Place the tray in the middle position of the oven & bake for 45 to 50 minutes.  Test the cake with a toothpick (or with a cake tester), it's ideal when toothpick insert come out clean. Take cake out of the oven and leave it to cool down on a wire rack for about 15 minutes before serve. Enjoy !
