Pork Chops With Mango

900 Grams Pork chops (loin)
2 Tablespoon Butter
1 Medium Red onion ( finely chopped)
2 Clove Garlic (minced)
1 Tablespoon Curry powder
1 Tablespoon Flour
1 Cup Chicken broth
1 Large Mango (choose a ripe one, peel, seed out and cut into cubes or any shape)
1/2 Cup Double cream (or substitute with thick coconut milk)
1/2 Teaspoon Ground cinnamon
1/2 Teaspoon Salt (or to taste)
1 Large Tomato (cut into small cubes or squares)
1/4 Small Green bell pepper (cut into small cubes or squares)
1 Small Shallots (cut into small cubes or squares)


Step 1
Heat the butter in a large skillet, when it's hot lay the pork chops in the skillet and fry both side about 10 minutes over high heat until chops get brown colour (5 minutes for each side). Remove chops from the skillet and set aside.
Step 2
Reduce the heat to medium high, then add onion and garlic in to the skillet and fry about 1 minute until sweat enough. Add curry powder and flour in to the skillet and stir well until well combined for further 2 minutes.
Step 3
Pour the chicken broth & salt in to the skillet and mix well all together. At the same time return the pork chops in to the skillet. Cover and cook it about 25 minutes over medium high. Make sure to stir once in a while, if it's getting dry add 3-4 tablespoons of water.
Step 4
Now add mango chunks in to the skillet and cook about 3 minutes. Transfer the mango and pork chops in to a warmed serving plate and keep hot.
Step 5
Now add double cream and ground cinnamon in to the skillet and stir well. Simmer it until sauce get thicker than it was before.
Step 6
Remove the skillet and pour the sauce over pork chops then add tomato, green bell pepper, shallots over the sauce & serve hot with rice.
