To marinate1 Pounds Lean pork (cut in to cubes)
1 Tablespoon Vinegar
1 Tablespoon Red chilli powder
1 Tablespoon Curry Powder
1/2 Teaspoon Turmeric
3 Clove Garlic (chopped)
1 Tablespoon Ginger (chopped)
Salt (to taste)
1 Teaspoon Peper
1 Tablespoon Soya sauce (additional)
For curry1 Stick Cinnamon
10 Curry leaves
1 Large Onion (chopped)
2 Green chilies (chopped)
1 Teaspoon Coriander seeds
1 Teaspoon Black peper seeds
1/2 Coconut milk (or you can use dairy milk)
1/2 Cup Water
2 Tablespoon Oil
For garnish1/2 Onion (chopped)
1 Clove Garlic
1 Coriander leaves (chopped)
1 Green chilli (chopped)
Put the pork in a bowl.
Add vinegar,red chili powder,curry powder,turmeric,salt ,pepper,chopped garlic cloves,chopped ginger and soya sauce mix well .
Marinated it for 1 hour.
To make the curry
Heat the oil in a large saucepan medium-high heat.
When oil is hot add onion, cinnamon stick,curry leaves,green chilies,cardamom,cloves,coriander seeds,and black peper seeds.
Fry it for 5 minutes until onion is light brown.
Then add marinated pork to the pan fry it for 7-8 minutes turning occasionally.
Now add 2/4 cup of water to the pan .
Cover and bring to a simmer for 15 minuteS stirring occasionally
Once the pork is tender add add 1/2 cup of coconut milk or dairy milk and stir well .
Taste for salt (if you like it bit more spicy add more chilli. )
Reduce heat to medium-low and Simmer for another 8 minutes.
Then add choped onion,garlic,chopped coriander and chopped green chilli stir well.
Transfer the pork to a large serving dish.
Serve hot with rice or bread.
